After a four year hiatus, Eco-J is bringing back its popular Farm-to-Table Dinner. Farm to Table is a culinary experience that uses seasonal ingredients, harvested right here at Eco-J, to create a memorable dining experience. “A Farm to Table dinner is more than just a meal—it's a celebration of sustainable agriculture and our local food culture,” said Alex Weyenberg, Land Stewardship Manager. “All of Eco-J’s produce is grown using organic, regenerative practices. Instead of pesticides, we rely on native beneficial insects and diligent monitoring to help us control pest and disease issues. Instead of synthetic fertilizers, we focus on building healthy, living soils using compost, cover crops, careful crop rotation, and no-till practices. There’s a lot of hard work that goes into it, but it’s a labor of love and the results have been amazing.” Chefs from Olde Madrid will be creating dishes using the majority of ingredients from the gardens of Eco-J. “Food that's locally grown and harvested at its peak ripeness is always going to be more fresh, flavorful, and nutrient dense than what you’re getting at the supermarket. As a grower, I take a lot of pride in the quality of our produce and I love sharing the harvest with others. The opportunity to hand over our high-quality ingredients to local chefs and food artisans is beyond exciting and I can’t wait to see (and taste!) what the talented folks at Olde Madrid are able to create using our produce,” stated Weyenberg. Participants will enjoy a 3-course meal in addition to appetizers and signature drinks in a relaxing and welcoming atmosphere. Additionally, there will be some educational opportunities like touring the gardens, visiting the alpacas, and more. |
